Elvis Special
Adapted from Roadfood Sandwiches by Jane and Michael Stern, published by Houghton Mifflin, 2007
2 tablespoons smooth peanut butter
2 slices Breadsmith Honey White Bread
1 small ripe banana, freshly mashed to a pulp
2 tablespoons butter or margarine
Spread peanut butter on one slice of bread and spread the banana on the other slice. Press the two slices together. Melt the butter over medium-low heat in a small frying pan. Fry the sandwich on one side until golden brown; flip and fry the other side. Serve immediately. Since this can be a messy sandwich, some people enjoy the Elvis Special with a knife and fork!
