Ciabatta, Greek Olive Cibatta and Rosemary Ciabatta
The Italian bread Ciabatta translates as “slipper”—a reference to the bread’s shape, which is oval and slightly flat.
Ciabatta has an open, airy texture and a crispy crust. It’s made with a sticky dough that has dimples depressed into it just before it gets dusted with flour and placed in the oven. We also bake Greek Olive Ciabatta and Rosemary Ciabatta several times a week. Wheat Ciabatta is only available Wednesday in our St. Paul bakery. All varieties are available in a mini size, perfect for a gourmet sandwich.
Serving Suggestion
Ciabatta is wonderful for passing with a meal. Give guests a plate with extra-virgin olive oil with a bit of freshly ground pepper and grated parmesan for dipping the Ciabatta.

Recipe:
Garlic Bread
Adapted from Food Network, Ina Garten
6 large garlic cloves, chopped
¼ cup chopped flat-leaf parsley
¼ cup chopped fresh oregano leaves
½ teaspoon kosher salt
Freshly ground black pepper
½ cup olive oil
1 loaf Breadsmith Ciabatta
2 tablespoons unsalted butter
Preheat the oven to 350°. Place garlic in food processor and process until minced. Add parsley, oregano, salt and pepper and pulse twice. Heat the olive oil in a medium sauté pan and add the garlic mixture, taking care to not let it brown. Remove the pan from the heat.
Slice Ciabatta in half horizontally. Spread the butter on one of the halves. Spread garlic mixture on the other half. Sandwich halves together and wrap in aluminum foil. Bake for five minutes. Open the foil and continue baking for another five minutes. Serve immediately.
